Super Easy Vegan Jello
Super easy and healthy vegan jello made with agar agar and sweetened with apple juice. Conventional jello is made with gelatin which is derived from collagen obtained from various animal by-products like the skin, bones, hooves, and connective tissues of animals such as cows, chickens, pigs, and fish. It is commonly found in most gummy candies, marshmallows, gelatin dessert, some ice creams, dips and yogurts. Here is a list of common products with and without gelatin.
Agar agar, on the other hand, is a jelly-like substance obtained from a combination of various sea veggies. It is a very good source of potassium, magnesium, iron, calcium, and protein. It is also lower in calories and sodium than gelatin.
Ingredients
2 cups apple juice or juice of choice
2 tablespoon of agar agar powder
handful of fruits and veggies (optional)
Directions
Throw a handful of fruits and/or veggies in the blender. You can choose to skip this step if you like.
Blend to desired consistency – chunky or smooth.
I used agar powder by Now Real Food
Measure 2 tablespoons into a small bowl and mix with some cold water or apple juice until it dissolves.
Measure 2 cups of apple juice in a measuring cup. You can also use any other juice of your choice or just water and sweetener of choice.
I used this organic apple juice I got from Costco.
Combine apple juice and dissolved agar agar in a pot and heat to boiling on low medium heat, stirring occasionally.
When it comes to a boil, remove it from the heat and mix in the prepared fruit and/or veggies if you’re using them.
Pour into mold and place in refrigerator to set. Agar agar will set very quickly and will even set at room temperature, so no refrigeration is required!
